On the Fly Cinnamon Buttermilk Biscuits

This afternoon I decided to whip up some biscuits. I didn’t want anything complicated or that needed to rise so I went hunting and found a recipe on the side of my flour bag. I didn’t have some of the ingredients and didn’t want to use the glaze they suggested so I adapted it to our taste. Here is what I am up with and boy, was it delicious! It took me all of one hour to make everything (including the butter), clean and begin typing it out.

Since I didn’t do the glaze I made Homemade Butter. Enjoy!

Biscuit Recipe:

Non-stick cooking spray

2 cups self-rising flour

¼ cup sugar

1 teaspoon ground cinnamon

¼ teaspoon baking soda

1/3 cup Crisco® All-Vegetable Shortening

½ cup of dried plums

¾ cup buttermilk*

Heat oven to 450 degrees. Coat cookie sheet with no-stick spray.

Combine flour, sugar, cinnamon, and baking soda in a large bowl. Cut in shortening with two knives or special tool designed for this until mixture resembles coarse crumbs. Stir in plums. Stir in buttermilk with fork until soft dough forms and begins to pull away from sides of bowl. Knead dough on lightly floured surface just until smooth and no longer sticky. Roll out until ½ inch thick. Cut with floured round cutter or knife. Place biscuits on prepared cooking sheet.

Bake 10 to 13 minutes or until light golden brown. Cool for 5 minutes and serve with homemade butter or your favorite jam.

Makes about 12 biscuits.

Note: I did not have buttermilk. I combined a little less than 1 cup of milk with 1 tablespoon of white vinegar and let sit while I finished combining the other ingredients (about 5 minutes)
