Fresh Strawberry VinaigretteBy Trillia Newbell | February 28th, 2012 | Category: Uncategorized | Comments Off on Fresh Strawberry Vinaigrette
I was given this recipe by my little sister who lives in Brooklyn, NY. There is just something about a homemade salad dressing! This is delicious on fresh spinach or on top of any salad or fresh vegetables.
1 carton fresh strawberries, washed and sliced
1 Tablespoon fresh parsley, chopped
1 Tablespoon fresh basil, chopped
1/2 teaspoon of dried oregano
1/2 teaspoon of dried thyme
1 clove garlic, roughly chopped
1/2 cup olive oil
1/2 cup Balsamic vinegar
salt and pepper to taste, optional
Put chopped strawberries in food processor (or mixer of choice). Mix until smooth and creamy. Add parsley, basil, dried oregano, dried thyme and garlic. Mix again for just a few seconds. Add oil and vinegar and mix until oil and vinegar are completely mixed together with the strawberry mixture. Add salt and pepper to taste if desired.
